UDeliciously Ella's Almond and Chia Energy Bitesnbeknown to Ella Woodward (now Mills), she introduced Victoria to the concept of the energy ball with these Energy Bites from her first book entitled ‘Deliciously Ella’ back in 2015.

Ella’s success rose from her blog with healthy raw recipes. They were created initially to help her self-medicate via good wholesome (gluten-free vegan) food to help a relatively rare illness POTS (Postural Tachycardia Syndrome). The results were so successful that her recipes changed her life.

So, here’s Victoria’s version of making Deliciously Ella’s Almond and Chia Energy Bites. This is a similar recipe from her website, but not the same as the book:

I’ve made these energy bites a dozen times or more. They are so simple to make. They’re easy to grab and go, and disappear from the fridge faster than you can say super cala… oh they’ve gone!

I use ground almonds instead of the nuts, so that process has already been done (and my baby Tommy Tippee food processor has less work to do!)

On the day of making these, Tesco only had traditional cocoa powder, not cacao powder, which is more processed and not as strong. But it did the job on this occasion, as a one-off. Grr.

As my little food processor is teeny, I batched the dates with the ground almonds and chia seeds and blended them a bit at a time. Then I put the coconut oil in the microwave for 20 seconds and added the almond butter into the coconut oil and blended them together. All of this before adding them to the dry mixture.

I added the cocoa powder last because I wanted to make sure I had the right amount, with it being slightly wrong. I tasted it with 4 tablespoons and it was still perfect.

Once it was all mixed together, I rolled the mix into inch wide energy balls (the consistency was just perfect) and popped them into the freezer to set. Then, once decanted into a Tupperware pot, they went into the fridge.

These energy bites from Deliciously Ella have been dropped two-at-a-time into Yeo Valley organic yoghurts, taken on dog walks into Sherwood Forest, and scoffed with a cup of earl grey at my desk whilst resizing images!
