If you enjoy nuts, you’ll be glad it’s National Nut Day! There’s literally a ‘day’ for everything now. No matter what you like to eat or drink, there will be a day in the calendar for it! Here at Energy Ball Recipes, we LOVE nuts. We could literally eat them in recipes every meal of the day!

If you’re not a fan of nuts, look away now! Or read about our Derbyshire Cookbook instead!

Pine nutsNational Nut Day: Breakfast

Well, there’s granola, which can include any type of nut. Flaked almonds are especially good for this. Then there are cereals such as Crunchy Nut Cornflakes which have peanuts as one of their main ingredients. Or how about some almond butter on rye bread with sliced banana on top and a sprinkle of cinnamon? Now you’re talking!

National Nut Day: Lunch

If you like spaghetti with pesto, you may know that pesto is made with pine nuts, basil, olive oil, Parmesan-Reggiano cheese, salt and garlic. Simple on it’s own or with extra veggies stir-fried and added to the mix! Alternatively, for something lighter, grind walnuts in a pestle and mortar and sprinkle onto a colourful salad for a bit more crunch!

National Nut Day: Dinner

Victoria is allergic to Brazil nuts, so sadly they never get added to Energy Ball Recipes in our house! If you’re lucky enough to enjoy them, mix them with couscous, freshly squeezed lemon, coriander and black pepper for an easy dish that can accompany any meat or vegetarian dish. This is a great dish for National Nut Day!

Energy ball Recipes with nuts

The majority of energy ball recipes have nuts as a base ingredient. It’s the easiest way to build a new recipe whilst retaining some of the high nutrient powers from the specific nut. The slight downside is that when energy balls have nuts as an ingredient, they are higher in natural ‘good’ fats, which means that they should be consumed in moderation.

National Nut Day

So, if you managed to eat nuts for breakfast, lunch and dinner on National Nut Day, then high five to you! If you’re still wandering around the kitchen looking for something to snack on, fear not.
